The Best BBQ Style Chicken Breast (Ever)

Ingredients:
- 2 large bone in and skin on chicken breasts
- 1 quart of water
- ¼ cup kosher salt
- ¼ cup granulated sugar
- 2 tablespoons granulated garlic
- 1 tablespoon crushed fennel seed (optional)
- 8 ounces of Glory Days Grilling Sauce
Directions:
To make the brine, bring a quart of water to a boil. Add salt, sugar, garlic and fennel seed, and stir until salt and sugar are dissolved and all ingredients are well blended. Cool the solution for 3 hours or until 35°F degrees. Place the chicken breasts into a zip lock bag and cover with brine. Refrigerate for 4 – 24 hours to add moisture and flavor to your chicken. Remove the chicken from the brining solution and rinse lightly. Pat dry with a paper towel. Preheat your gas or charcoal grill to 350°F and season the grill grates lightly with oil to avoid sticking. Add the chicken to the grill, placing it meat side down and grill for 8 minutes TURNING AS NEEDED until well seared. Turn the chicken on grill bone side down for an additional 5 minutes. Remove the chicken from the grill and baste thoroughly on both sides with the grilling sauce. Place the chicken into a preheated 350°F oven and roast for 20 minutes or until an instant read thermometer placed in the thickest part of the chicken breast reads 165°F or higher. Remove the chicken from the oven and baste with more grilling sauce. Allow the chicken to rest for five minutes and carve like you would a turkey breast.
